Sodium alginate is a by-product of extracting iodine and mannitol from kelp or Sargassum of brown algae β- D-mannuronic acid（ β- D-mannuronic, m) and α- L-guluronic acid（ α- L-guluronic (g) is connected by (1 → 4) key. Application
Food Grade sodium alginate
Sodium alginate is used to replace starch and gelatin as the stabilizer of ice cream, which can control the formation of ice crystals and improve the taste of ice cream. It can also stabilize mixed drinks such as sugar water ice cream, ice fruit dew and frozen milk. Many dairy products, such as refined cheese, whipped cream and dry cheese, can prevent the adhesion between food and packaging by using the stabilizing effect of sodium alginate, and can be used as the covering of dairy jewelry, which can make it stable and prevent the cracking of frosted pastry.
2. Application in pharmaceutical preparations
Sodium alginate is also used in the production of suspension, gel and concentrated emulsion containing fat and oil. Sodium alginate is used in some liquid drugs to enhance viscosity and improve the suspension of solids. Propylene glycol alginate can improve the stability of the emulsion.
3. Application of printing and textile industry
Sodium alginate is used as reactive dye color paste in printing and dyeing industry, which is better than grain starch and other sizes.
