1. What is chlorogenic acid?
Chlorogenic acid is an effective substance extracted from green coffee beans, also known as "coffee tannin" and "coffee tannic acid". It has a high content in Eucommia ulmoides leaves (2-5%), honeysuckle (1-5.9%), sunflower seeds (1.5-3%) and coffee beans (2-8%). It is more soluble in hot water and ethanol. Chlorogenic acid is an ester condensed from caffeic acid and quinic acid, which belongs to phenolic compounds. Because the molecule has o-diphenol hydroxyl group, it has strong reducibility and is more easily oxidized by free radicals, so it shows good free radical scavenging effect and anti lipid peroxidation.
